Wholemeal, oat & berry muffins

I wanted a lunch box recipe that was healthy, simple and uses ingredients that most of us would have at home.  The end result are these wholemeal, oat & berry muffins.  It only uses one bowl (I love this fact as washing up isn't my favourite thing to do!) and the kids will love them, adults too.



WHOLEMEAL, OAT & BERRY MUFFINS (makes approx 17)

  • 1 cup quick oats
  • ½ cups milk
  • 2 cups self-raising flour (wholemeal or white)
  • ½ cup brown sugar
  • 1 egg
  • ¼ cup honey
  • 60g butter, melted
  • ¼ cup frozen berries
Step 1 - Preheat oven to 180 degrees celcius. Line 2 x 12 muffin pan with cases. 

Step 2 - In a large bowl, add oats & milk.  Let sit for 5 mins.

Step 3 - Add flour & sugar, egg, honey and butter.  Stir until well combined.

Step 4 - Stir through berries.

Step 5 - Fill each muffin case to approx ¾ full. 

Step 6 - Bake in preheated oven for 18 to 20 mins or until golden.

EAT!!
