Chocolate sludge

Another super quick and yummy week night dessert - only takes 12 mins to make!

Chocolate sludge
Serves 4

Pudding
  • 1 cup self raising flour
  • 2 Tbspn cocoa
  • 1/2 cup caster sugar
  • 1/2 cup milk
  • 70g butter, melted
  • 1 egg


Sauce
  • 3/4 cup brown sugar, firmly packed
  • 3 Tbspn cocoa
  • 2 1/2 cups boiling water

Step 1
Preheat oven to 160 degrees celcius. Grease a 2 litre oven dish.    

Step 2
Sift flour & cocoa into a large bowl. Add sugar & stir to combine.   

Step 3
In a separate bowl, whisk together milk, butter & egg. Pour the egg mixture into the flour & mix well. 

Step 4
Pour into oven dish & smooth out to edges.  

Step 5
In a separate bowl, add brown sugar & cocoa. Stir.  Sprinkle evenly over the top of the pudding.

Step 6
VERY GENTLY, pour boiling water over top of pudding.

Step 7
Bake in preheated oven for 40 mins.  Let sit 10 mins prior to eating to allow sauce to thicken. Serve with vanilla icecream. Alternatively, you can refrigerate until required. Prior to reheating, pour 1/2 cup boiling water over pudding & reheat in microwave.



Storage:
Fridge, covered for up to 2 weeks
