This is a great cake to make with the kids over the weekend and.... if you are feeling game, let them decorate it themselves! That won't be happening at my place this weekend as I have 2 sick children and the thought of them coughing all over the ingredients doesn't sound too appealing!
I do love this cake though and it is the perfect recipe for a child's birthday cake.

Chocolate cake
• 150g butter
• 1 ¼ cup brown sugar
• 3 eggs
• 1 ¼ cup self raising flour, sifted
• ½ cup plain flour, sifted
• ½ tsp bicarbonate of soda
• ½ cup cocoa
• 100g dark chocolate
• 1 cup milk
Icing
• 125g butter
• 1 ½ cups icing sugar, sifted
• ½ cup cocoa, sifted
• 1 Tbspn milk
• smarties/sprinkles to decorate
1. Preheat oven to 160 °C. Line a deep oven tray (23cm x 33cm) with baking paper.
2. In a small bowl, add butter & sugar & beat with an electric mixer until light & creamy.
3. Beat in eggs. Add flours, bicarb, cocoa & beat until combined.
4. Add melted chocolate & milk & stir through.
5. Spread into oven tray & bake for 25 mins or until cooked through. Leave in tin for 5 mins then transfer to a wire rack to cool.
Icing
1. Beat together butter & icing sugar until light & creamy. Add cocoa & milk & beat. Spread over the top of the cake. Decorate with smarties & sprinkles. NOTE: if intending to freeze, place smarties on cake after defrosting as they may lose their colour when defrosting.
Storage:
At room temperature, in airtight container for up to 3 days.
In fridge, in airtight container for up to 5 days.
In freezer, in airtight container for up to 2 months.
